Must try Immunity Booster Beetroot Soup at Home

Step 1

Heat some olive oil in a large vessel on medium heat. Add onion and garlic in hot oil and stir for 5 minutes until soft but not browned.

Step 2

Add the chopped beetroot and cook for about 1 minute.

Step 3

Add some chopped vegetables of your choice in the heating mixture and season with salt and pepper.

Step 4

Bring the mixture to a boil, cover and put the heat to medium-low.

Step 5

Simmer it for 20 to 30 minutes until the beets turn tender. Switch off the heat and cool the mixture.

Step 6

Put the cooled down mixture in the blender in batches until smooth. Then heat the pan again and let the blended mix cook on low heat.

Serve the Beetroot soup garnished with some cream.
