Soak Urad Dal for a couple of hours
Drain the dal and make a coarse batter with the dal by adding cumin, ginger, hing, chillies
Now keep beating the batter for a foamy consistency
The more you aerate the batter, the softer your bhallas will be
Deep fry the batter in hot oil. Take them out once golden and immediately dunk them in fresh bowl of water
Now Assemble the Dahi Bhalla by squeezing out all the water from each bhallas
In another bowl, beat fresh yogurt. If it is too sour, add some sugar and beat it
Take a plate, place the vadas and generously pour the curd
Now pour boiled potatoes, boiled chickpeas, sweet chutney, tamarind and sonth chutney and sweet chutney in the plate
Sprinkle rock salt, chat masala, chilli powder, roasted cumin powder and your Dahi Bhalla will be ready
