1 cup semolina, 1/2 cup sugar, 1/2 cup plain yogurt, 1/4 cup coconut (optional), 1/4 cup vegetable oil (or melted butter), 1/2 tsp baking powder, 1/2 tsp vanilla extract, Pinch of salt, Almonds or pistachios for garnish
1/2 cup sugar, 1/2 cup water,1/2 tsp lemon juice
In a small saucepan mix sugar, water and lemon juice together. Bring to a boil and stirring until the sugar has dissolved and let the mixture cook for another five minutes.
Semolina, sugar, yogurt, oil, baking powder, vanilla and a pinch of salt must be stirred in a bowl. Add coconut if desired.
Transfer the mixture into a greased microwave safe dish. Scrape the top of the level with a spatula.
When phase is fully incorporated turn on microwave at high setting to heat for 4-6 minutes.
To check If the cake is done, insert a toothpick after 4 minutes and if it is clean then the cake is done.
After baking it may be necessary to wait for the cake for 1-2minutes to cool.
Pouring the cooled syrup over the warm cake allowing it to soak in. Garnish with almonds or pistachios if desired, and cut into squares. Your quick semolina cake is ready to serve!
