1 cup soaking imli, 2-3 teaspoons jaggery powder, 1 teaspoon cumin powder, 1 teaspoon red chili powder, 1 teaspoon anardana, 2 tablespoons water, and a pinch of black salt.
Begin by soaking the tamarind in warm water for around 20-30 minutes. This softens the tamarind and makes it easier to extract the pulp.
Once softened, squeeze the tamarind to get the thick, flavorful pulp. Strain to remove the seeds and fibers.
In a pan, combine the pulp, jaggery, cumin, anardana, red chili powder, and black salt. Add water and simmer until the jaggery dissolves.
Allow the chutney to simmer over low heat for a few minutes. Once cooled, transfer to an airtight container and keep in a cool, dark location.
