Ingredients

We need: Olive Oil or Butter, Mushrooms, Onion, Garlic, Fresh Cream, Salt and Pepper, Coriander, Vegetable Stock.

Step 1

First, clean the mushrooms properly and then cut them into thin slices. And also cut the onion in dice shape and mince the garlic.

Step 2

Take the saucepan and add the butter or olive oil and add garlic oil and then oil and sauté it for 5-6 minutes until caramelized.

Step 3

Now add the mushrooms in the pan and cook for 8-10 minutes and keep stirring until the mushrooms are properly cooked and have released their water.

Step 4

Pour the vegetable stock broth in the pan and boil it for 2-3 minutes and then put the flame on low and cook it for 10 more minutes.

Now transfer the cooked soup in the blender and blend it until it’s creamy and smooth or you can also leave some chunks if you like it.

Step 6

Now take the pan again and pour the blended soup in it and add the fresh cream along with salt and pepper according to your taste. And let it simmer for few minutes

Serve

Now the delicious heartwarming soup is ready, garnish it with sauteed mushroom and coriander and enjoy.
