Boil and Mash your potatoes. Saute them with mustard seeds, curry leaves, salt & turmeric & then shape them into balls.
Mix gram flour, salt, turmeric & a pinch of baking soda in a bowl. Add water to form a dense batter.
Coat your potato balls with the batter, ensuring they’re fully coated. Deep fry in hot oil until golden crispy.
Spread butter on the pav buns and lightly toast them on the tava.
For authentic taste make and sprinkle dry garlic chutney along with green & tamarind chutneys.
Spread the chutneys on both sides of the pav then place the vada inside it and press it gently.
