To make a soft dough, combine water and wheat flour. Put a lid on it and leave it alone.
Add salt, coriander, and spices to the mashed potatoes. Stir well.
Just like you would with the potato filling, divide the dough into little balls.
Put the potato filling in the middle of a rolled ball of dough and seal it like a pouch.
Gently roll the packed ball into a round paratha after flattening it.
Place the paratha on a heated tawa and cook till golden spots form. Repeat by flipping.
For a deep taste, brush both sides with butter or ghee while cooking. Serve hot with pickles or curd.
