Add coffee powder and whisk until well combined.
In a small bowl, mix caramel syrup with 1 tablespoon of water.
In another small bowl, mix cornflour with 1/4 cup water until smooth. Add to the milk mixture and stir well.
Cook over medium heat, stirring constantly, until pudding thickens (about 5 minutes).
Remove from heat and stir in caramel syrup mixture.
Pour into individual cups and refrigerate until chilled. Serve cold and enjoy
