Combine achari masala spices, such as fennel, mustard seeds, fenugreek, and dried red chilies, along with salt, turmeric, and a pinch of chili powder. You can use store-bought achari masala for convenience.
Toss the okra slices with a bit of oil to ensure the spices stick, then evenly coat them with the achari spice mix.
Set your oven to 350°F (175°C) or preheat your air fryer to a similar temperature.
Spread the coated okra slices in a single layer on a baking sheet or air fryer basket. Bake or air fry until crispy, flipping halfway through for even cooking (15–20 minutes).
Let the chips cool for a few minutes to crisp up further.
Serve the achari-flavored okra chips as a snack or side dish.
