1 cup heavy cream, 1/2 cup cocoa powder, 2 tablespoons sugar, 1/4 teaspoon salt, 1/2 cup dark chocolate chips and 1 tea spoon vanilla extract (optional).
In a large mixing bowl, whip the heavy cream until it gets soft and then set aside.
In a separate bowl, whisk cocoa powder, sugar and salt together until it gets well combined.
Melt the dark chocolate chips in a double boiler or in the microwave in 30-second increments, keep stirring it between each interval.
Fold the whipped cream into the cocoa mixture until it gets well combined. Then, pour in the melted chocolate until it gets smooth.
If you are using vanilla extract, stir it in at this point when you are done with mixing all the ingredients together, to add a hint of flavour.
Pour the mousse into individual serving cups or a large serving dish and chill in the refrigerator for at least 2 hours to set. Serve chilled and enjoy!
