Mango Phirni

Take 1/2 a cup of basmati rice and wash it thoroughly with water and soak. After 30 minutes, strain the water and transfer the soaked rice to a mixer and grind it coarsely. Cut a mango into small pieces and blend it to a smooth puree. Set aside. In another pan, heat 250ml milk on medium heat. Then add the blended rice mixture to the heated milk with half a cup of sugar to the mixture and stir well. Let it boil and then cover the pan.

Add a teaspoon of cardamom powder, and if desired, a few drops of orange food color and chopped dry fruits. Next, add the prepared mango puree and mix everything well. Cook the mixture for another 5 minutes until it thickens and serve hot or cold.

Begin by adding fresh mango pulp into a blender jar. Next, pour a glass of chilled milk into the blender jar. Add sugar and a scoop of vanilla ice cream to the blender jar and blend the ingredients until smooth. Take a serving glass and add mango chunks to the base. Add some tootifrooti to the serving glass and pour the prepared blended mixture over. Add another scoop of vanilla ice cream on top and garnish the glass with some mango chunks, tootifrooti, and a cherry on top.

Carrot poriyal baked puffs are a healthy and tasty snack option by Jyoti a food creator at Moj. To cook chop the carrots and soak the moong daal and urad daal. Heat some oil in a pan and add mustard seeds and soaked daal. Stir fry the daal until it is golden brown. Add curry leaves, chopped carrots, and red chilli and fry for 2 minutes. Add some water and cover the pan and cook until all the water has evaporated. Add grated coconut and fry for another two minutes. Keep it aside to cool.

For the dough, add olive oil to the flour and mix well. Add water and knead it into a semi-soft dough. Preheat the oven to 180 degrees. Roll the dough and form a 6-inch gujiya shape. Add the poriyal into it. Lightly brush it with olive oil and bake for 15-20 minutes. Serve with carrot chutney.

Rinse the quinoa under running water for at least 30 seconds and drain the water. On a gentle flame, steam the quinoa until well cooked. Heat oil in a pan. Add the cumin seeds and allow them to crackle with chopped ginger and quinoa and sauté well. Let the mixture to cool. Add mashed potatoes, green chilli, salt, black salt, cumin powder, fenugreek, and rice flour. Divide the mixture into equal parts and make round patties and shallow fry the patties till they become light golden brown in colour.

This mango salsa by NeetikaLiggafood creator at Moj is made with sweet, ripe mangoes, red onion, jalapeño, cilantro, and lime. It has a terrific sweet and spicy tang that works well with your favorite food, nachos, meal bowls or tortilla chips!

Mix a mango (peeled and chopped),  ¼ cup finely chopped red bell pepper, ¼ cup finely chopped onion, 1 tbsp finely chopped jalapeno or green chillies, 2 tbsp chopped cilantro, 2 tbsp lime juice, sugar to taste, salt to taste, cover and let it rest for 30 minutes and refrigerate before serving if you want.
